BERRY REFLECTION


My aim to find a new refreshing summer drink seemed a long way off this year. 
However I found it in a small Rotorua bar in New Zealand....



*BERRY REFLECTION* 


1 part ABSOLUT Vodka or any other brand you have handy
2 parts tonic Frozen berries or a single berry like the picture below (raspberries) 

Method: Fill a highball glass with ice and frozen raspberries. 
Add Vodka and top up with tonic. 
Garnish with a sprig of fresh mint or other herb of your choice for that extra personal expression.

EGG and AVOCADO

       We'll be having them again, what more can I say!



Easy as to prepare and to cook.

Just slice the avocado in half (remove the seed)
Carefully crack an egg into the avocado.
Bake in the oven for 15 to 20 minutes.
Although this pic shows them topped with chives and pepper.
I added caramelised onion and red pepper chutney to the side.

A new report published by the journal of the American Medical Association (JAMA) has drawn attention to a massive salary disparity in the U.S. nursing sector. Across the board, male nurses are outearning their female colleagues, despite the fact that they are outnumbered 10 to 1.

In hospitals, male nurses are earning $3,900 more than female nurses, a number that increases to $7,678 in ambulatory/outpatient settings. The gap is most pronounced for nurse anesthestists - males in this position earn a whopping $17,290 more than females every year.

LONG ISLAND TEA

LONG ISLAND TEA



Ingredients
1 nip (30mls) vodka
1 nip (30mls) gin
1 nip (30mls) rum
1 nip (30mls) triple sec liqueur
1 nip (30mls) tequila
2 teaspoons orange juice
2 nips (60mls) cola
1 wedge lemon


In a cocktail mixer full of ice, combine vodka, gin, rum, triple sec and tequila. Add orange juice and cola. Shake vigorously until frothy. Strain into a long glass filled with ice, and garnish with wedge of lemon.

BUTTERY RHUBARB CUSTARD BREAD PUDDING

           This dish quickly became a talking point when added                 to a shared lunch table.

Made with homemade Rhubarb jam, this cost efficient
treat was not only mouthwatering divine
 it looked deliciously stunning. 


Serves: 6Cost: $0.60 per servingPrep time: 10 minutes Oven Temp: GrillCooking: 10 minutes max

Ingredients

8 slices of white sandwich bread
Rhubarb jam
Butter
Custard powder
3 cups milk
3 Tablespoons of sugar
Runny chocolate to decorate

Method

Make up custard according to instructions then pour into lasagne dish  (don’t overcook the custard)
Trim crust from bread
Butter one side and jam the other, then roll jam side in
Cut rolls in half
Then push the rolls into custard (make sure to push them as far as you can into the custard)
Grill in the oven till lightly toasted
Lightly drizzle runny chocolate over the top

Can be served hot or cold

RHUBARB JAM

Rhubarb Jam



Servings
3 x 250 ml Jars

Ingredients
3 cups chopped rhubarb
1 cup chopped berries
21/2 cups of sugar
½ cups water
1 Tsp of gelatin

Method
  1. Put chopped rhubarb in a saucepan and add water.
  2. Stir continuously while it bubbles and boils until rhubarb goes soft.
  3. Add berries mix till blended.
  4. Add sugar and bring to the boil, stirring till it is dissolved.
  5. Take off the heat add gelatin stirring till it is dissolved.
  6. Pour into sterilised jars


Tip: 
If you have rhubarb in the garden, harvest it then chop into small pieces put into an ice cream container and freeze to use later.
