Rhubarb Jam
Servings
3 x 250 ml Jars
Ingredients
3 cups chopped rhubarb
1 cup chopped berries
21/2 cups of sugar
½ cups water
1 Tsp of gelatin
Method
- Put chopped rhubarb in a saucepan and add water.
- Stir continuously while it bubbles and boils until rhubarb goes soft.
- Add berries mix till blended.
- Add sugar and bring to the boil, stirring till it is dissolved.
- Take off the heat add gelatin stirring till it is dissolved.
- Pour into sterilised jars
Tip:
If you have rhubarb in the garden, harvest it then chop
into small pieces put into an ice cream container and freeze to use later.
